The good drink doctor, (And others, not just you, a reply to the whole thread.)

You obviously run a good place, biggest bar i managed was about 30 staff a 
night (not so big on the serving staff and bar backs here in uk, you want a 
drink? come to the bar and ask for it.)  Currently waiting for an interview on 
a general manager position at a new bar opening near me. Currently waffling.   

However, may i be so bold as to suggest that..... a tip is optional.  Even in 
cultures that it is expected (I have worked in Canada too)

If a customer chooses not to tip, at the end of the day, that is their choice. 
 Next time they order a drink, i would think they still get a reasonable level 
of service (I mean would you deliberately f*!k up a drink because somebody 
didn't tip?)

I'm not sure i've had a point here? I'm sure there was one but perhaps just a 
question of what a tip is? A tip. A choice? I don't know, just a thought.
