manager: tim oakley. i did a trial stint for him a year or so ago. still got 
the recipe lists. R.S.P - yep no citrus, blackberry puree and fresh blue 
berries and raspberries. possibly clutching onto straws, but maybe he's hoping 
to get some sour from raspberries and he's working with citrus hints from moet.

        on paper i agree with adam, it does seem a bit unbalanced. having met 
the guy personally, i wouldn't call him an idiot though, 'sweet tooth tim' 
maybe or maybe his list is based on the tastes of his clientele - 
claphamites/battersea crowd (nidal add comment here)

     i don't have a copy of his CV, but i wouldn't rule it out. although just 
25ml of gin in a bramble and half and half in an espresso martini do raise an 
eyebrow!!!
