As far as giving a guest what they ask for, aren't we in the business of
upselling. If someone asks for a whiskey sour what's wrong with asking a guest
if he or she would like to a try a drink which is similar but that they may
enjoy more. Call it a whiskey sour or whiskey passion, a round is just called
a round when ordered for the second time. And doesn't a rose by any other name
still make me sneeze. Besides, none of us would sit down at George's bar and
expect a carbon copy of a cocktail that anyone could reproduce, just as I
don't expect people to leave my bar feeling like they had a "nice" whatever...
If that's all a guest wants, there are more than enough patches of mahogany to
get that.
