Well, Daiquiris and Gimlets may be sours, but they're not Sours, if you get my 
drift. A Sour, like a Whiskey Sour, Gin Sour, Vodka Sour, whatever normally 
means lemon juice, and most people who order Sours are expecting that. 
(Assuming they're not expecting Whiskey & Sour Mix)
