I'll probably catch hell for this (especially from Drinkboy), but I swirl 
mine. I've never shaken one (well, 'cept one that I remember by request). But 
I don't stick that long bar spoon in my tin and stir......I ice a cocktail 
glass and fill it with water or soda water to let chill while I make the drink 
then I make the Manhattan in the tin with ice, place the strainer on top and 
swirl. I dump the water and ice from the glass, drop a cherry in, place in 
front of the guest and pour (I like pouring the drink in front of them if they 
are sitting at the bar).

One difference I didn't see mentioned is that I always think that a 
stirred/swirled cocktail that is served UP tastes silkier (silky)....if 
there's such a word for taste. A shaken cocktail tastes lighter to me probably 
due to the air that was shaken in to it.

My Manhattan experience is that most people that order it usually order by 
calling the bourbon/whiskey.  If they don't, I'm a good little bartender and 
continue with my upsell technique of asking them if they would like me to use 
their favorite bourbon/whiskey. I also find that I have to ask 75% of the time 
if they would like it on the rocks or straight up.

Also, I was at Epcot last year with Scott Young and he asked me when someone 
orders a Manhattan and they just want a well Manhattan, what do I grab from 
the well? I guess it's a personal preference, but I told him that I grab a 
blended whiskey instead of the bourbon because I think that it tastes smoother.
