

i work ina building with prolly 12 bars, prolly 30 tenders, obviously its
pretty hard to find good people so...some of them arnt very good. anyway, its
ok cause we have some bars that only get the highball and beer crowd so if
they can handle that..fine. well this girl walks off her shift the other day
at a service bar, so we get this girl to cover from one of the downstairs beer
bars. in the first 10 mins someone orders a manhattan, her response "whats a
manhattan?!" rofl so bad. then i think she got something like a gimlet and
didnt know that either. yikes... her famous quote "i donno how to make these
drinks!"
the worst are barbacks who go to cut fruit when im working, i think they all
know now that i like to cut my own fruit because i take pride in it. even when
im working service, i will make some raspberry garnishes to put on things like
juices that people order. i like perfect wedges, twists, and i like my olives
to sit with the pimento facing up when laid across a drink. lately i will do a
lime like this

you have to do them as you go cause they brown quickly. that or do the full
lime then wipe the outside fo the lime with a lemon wedge.
I like that i take time to make a drink and servers will come back to me and
say things like "i donno what you did, but they loved them!" etc.
