There's plenty to say on this topic, that doesn't have to be the end of the
thread. I wrote elsewhere that I would happily shake any drink upon request.
This discussion isn't about what to do when a customer asks for a drink
shaken, I would hope that for those of us in the service industry it would be
a no-brainer. The much more common scenario is that the customer does not
specify and it's up to the discretion of the bartender on how to prepare the
drink. Hopefully the bartender is knowledgable enough about mixing techniques
to know the difference between shaking and stirring and when to do each.
Just a guess here, but do you find that most people who make a point of asking
for their drink shaken are ordering vodka martinis? In my experience this is
the crowd that wants it as cold as possible and with ice chips. I've never
had anyone request a Manhattan this way and only occasionally for a (gin)
Martini.
