

One can always fall back on "art is subjective, everyone has a right to an
opinion". Yet there are art critics in the world whose opinions are respected
for their knowledge of the material in their field, that have more weight than
that of people who are novices in the field.
Fortunately in the world of cocktails there isn't as large of a spectrum for
expression. Still, an experienced bartender with good knife skills will
probably do a better job of garnishing a drink than someone who is
inexperienced. There might be someone out there that likes the latter's
drinks better but we can reasonable expect the consensus to go with the
former, that there is a standard that one can be measured against with regards
to their garnishing skill.
I do agree that it's a matter of taste but some people's tastes are more
widely appreciated than others. In this business I'd rather be the tender
making the drinks that the majority of the customers find aesthetically
pleasing.
