Haven't read the whole thread, but I too taste my drinks.  Its fairly normal 
to taste drinks that are either new or involve ingredients with variables, or 
equally if you are unsure of the quality.

For example with reagrds to variables, it would be perfectly fine to taste a 
daiquiri, manhatten, margarita, old fashioned, because the limes used could be 
riper or more prominent in one drink than another, the trick is to find 
balance, or the whiskey, vermouth has aged or had too much air and would also 
call for a change, or even if you are using different whiskey than standard in 
your manhatten 3:1 with one whiskey is not necessarily the same for others.

don't be shy to taste drinks.  For me it shows professionalism, it is 
conceivable that we are human sometimes and cannot remember if we added an 
ingredient.  By tasting the drink you know whether its missing (well you 
should do).
