Wow. I have no understanding at all of what you are so riled about.
Unless he was copping a major attitude as well, that is totally normal, 
rational behaviour.
Your precious cocktail list is only a starting point for all the things you 
are capable of making. 

"Do you have Ginger Ale?"
"Yep"
"I guess you have Gin"
"Of course"
"Then I'd like a Gin & Ginger ale please"
"No way. That's totally impossible. It's not on the menu!"
"But you...?"
"Do you want to speak to the manager?!"

You may have some issues with pricing, or what bloody key to press on the 
till, but that is NOT a dire problem.

I often have people walk in and request something a bit different (not often 
enough) and it usually leads to a nice little discussion.
I also have folk wandering in and saying 
"I'd like a B52, it's a shot, with Kahlua, Bail..." 
"OK, I'm on to it!!"

Yep, plenty of times. Chefs are the worst with that.
(And bartenders are the worst with this)
