i was into flair when i first moved here.  now, give me a bar 4-5 people deep 
all with room charge tabs.  that is where the money flows.  room charge tips 
can be tracked, but people give more freely with room charges than anything 
else.

as for types of mixologists in this town, there are two.  Drink pourers and 
bartenders.

drink pourers-about 90-95% in this town.  people that pour drinks and don't 
really do anything else other than stock the bar and pour.  you will see them 
in loud clubs or with a pissed off look on their face.

bartenders-5-10%.  a person that actually tends the bar.  when pouring liquor 
is a minor part of their job.  a bartender is the 'MC' of the bar.  he/she 
remembers everyones name, introduces everyone to each other, and maintains the 
pace of the bar.  i can go on for hours about what a good bartender is, sad 
thing is there are very few good bartenders around.
