I had this exact same thing the other week. A guy who comes in reguarly was 
out for his birthday. hes not a big drinker at all and actually almost always 
had one of a special virgin cocktails my fellow batender made up for him. So 
it was his birthday and he wanted to stick a few shots of vodka in his normal 
virgin cocktail, so i told him that would shoot the taste right he should try 
something from the cocktail menu. He didnt fancy anything from the menu but he 
mentioned that he'd once had a Zombie that he'd enjoyed.

So i think great, a cocktail that i have never made, but should really know i 
guess, so i get my bar book out and look up the recipe. The recipe was 
extrwemely strong with, light rum, dark rum and overproof rum and maraschino 
liquoer, but with very little mixer. So i saw this and just thoguht to myself. 
if i make him this classic recioe he'l hate it and probably spit his first sip 
back in my face. So what i did was just add a litte more grapefruit juice (as 
the recipe said) exchanged the liqueor for syrup and didnt add as much over 
proof rum and i had a not bad cocktail, which he enjoyed, while still 
mentioning a strong taste of alcohol.

But end of story, he enjoyed the cocktail, so we're all winners right????
