I've read most of the other posts, and I agree with most of what others have 
said as being the next trends... rums, mojitos & caiprinhas, etc.

However, I have a sneaking suspicion that our next cocktail fad (at least in 
the USA) will be determined by the next television show that makes cocktails a 
part of their stories. As, shizzle stated above, "a la sex and the city, we're 
slowly weaning away from the Cosmopolitan trend". While I never watched "Sex 
and the City" myself, at the peak of the show's popularity, I had numerous 
requests from young women for that Sex and the City drink. The American public 
seems to have a tendency to emulate what they see on TV when it comes to drink 
choices. I've even had guys that asked for Duff Beer (Simpsons) and Buzz Beer 
(Drew Carey)!

Another less obvious fad is when cocktails and/or spirits are mentioned in 
songs. I noticed sales of Patron went up when Usher mentioned having "a shot 
of this here Patron" in one of his songs. The same thing happened when the 
song "Pass The Courvoisier" was getting steady airplay.

I dread the thought of foams being the next big thing.
