I've not actually read this entire post, so i'm not sure of someone has 
brought up this point, but i think the trends in drinks will be doing the 
simple things well. I've already gome on about this is Class and Theme mags, 
but i feel that the way forward is to let the customer into our world. Think 
about it, 5 years ago if you ordered a Mai Tai, what would you get? A long, 
crap filled concoction filled with fruit juices, syrups and poor rums, but now 
you'd get a delicious drink, delicately balanced with lime & curaco finished 
with a nice gulg of orgeat and served in a hand made tiki mug (except in the 
90% of main land USA hahaha!). Now that's progress!! This foam thing is, quite 
frankly, bollocks. It has it's place don't get me wrong, but it's a fad. 

The future? Show the customer what an experience an impressive back bar can be.
