It is strange how some people think that a Margarita made with 100% agave 
tequila is a premium cocktail, I personally consider it to be the default. 
People who add gomme to a Margarita or Side-car obviously lack the ability to 
balance 3 ingredients in one drink. Which is a little sad. If it is a customer 
requesting a sweeter Margarita/ Side-car then they obviously do not appreciate 
a well-made drink. 

If you use too much Cointreau, or don't balance it properly with fresh lime 
juice, then the Cointreau can take on an almost confectionary oranginess which 
can be off-putting, to say the least. 

I would love to be able to order a Margarita (something I rarely do) and not 
get some bogus fiddled-around-with drink. People adding gomme is one thing 
that annoys me, as the gomme doesn't just sweeten the cocktail, it smothers 
it, so that all the nuances of the agave flavour are lost.

The other thing that annoys me when people try to "improve" a Margarita is 
when they split the fresh lime juice 50:50 with fresh lemon juice. Lemon juice 
adds a "fizzy" element to the Margarita when doesn't go well with the 
smoothness of a properly prepared drink.
 
And while on the subject of Margaritas, if someone wants a sweeter drink then 
there are other ways to accomplish this, besides adding sugar syrup, by 
changing the ratios used. The 3:2:1 is Gary Regans recommended Margarita.


Margarita ratios:

2:1:1 = 6:3:3 (50% tequila, equal parts cointreau & fresh lime juice).

3:2:1 = 6:4:2 (50% tequila, double as much cointreau than fresh lime juice).

3:1:1 = 6:2:2 (60% tequila, 20% cointreau, 20% fresh lime juice).

1:1:1 = 6:6:6 (33% tequila, 33% cointreau, 33% fresh lime juice).

2:1:2 = 6:3:6 (40% tequila, 20% cointreau, 40% fresh lime juice


I have tasted all these recipes, and the 2:1:1 is still my favourite.
