Our bouncer had a heap of lines.

His best was probably "So what's your date of birth then? .. uh-huh. And your 
telephone number?"

Sometimes they twigged, sometimes they didn't. 

At the bar it's pretty simple. Pass the buck and blame the law, the 
management, the polititians, the kids outside hanging around the door, It's 
not your fault and everybody knows it.
"I would not be doing my job properly if I didn't ask"

And remember, we're the ones in charge of their supply of sweet, sweet liquor.
Make sure everyone on the team is on the same page. If they huff off, make 
sure they don't get a drink from someone else without exactly the same 
treatment.
OTOH, once they are carded, it's good practice to let everyone know. And 
letting the customer see you are doing that is often rewarding...
