Depending upon the individual, the situation, etc.

Many places I work we card if you look under 35 years of age.  If anyone 
pitches a fit, that sometimes signals something is out of place, but not 
always.

Use that wit, charm and cleverness that got you behind the bar and turn the 
negative downer of carding into something fun.  A co-worker of mine usually 
noted the declared weight of the women he carded, and could pull of a "Hmmm, 
you're a 102 lbs.??!?!?!??" and get away with it without being an ass and 
earning a fair tip for the team.  Yes, he is one in a million, but so can you, 
which is how I see things.  Opportunity always knocks.
