And I'm not calling anyone here average, but there are obviously a good few 
thousand folk that turn up and do just the job.
They don't take cocktail books home and memorise recipies.
They don't read up on products, histories, fashions and details.
They seldom try that extra bit more.

I agree with Angus.
If you find a flair bartender, chances are they have developed a certain 
commitment to their profession (They will probably regard it as a profession), 
and will be more likely to fill the above criteria also.

Flair bartenders are not better that all bartenders - of course.
And INAPPROPRIATE flair bartenders are in some cases worse.

BUT a flair bartender will always be better than the AVERAGE bartender.
