As Diageo sees it, speed is of the essence for bartenders. At Boston's Baja 
Cantina, bartender Joseph Duprey delivers a margarita in just under 10 seconds 
-- compared with the three minutes required to prepare a margarita by hand. 
"When I'm busy, it's incredibly convenient," Mr. Duprey explains. "Just pull 
the lever, that's it."
