flair bartenders do have a problem with us 'mere mortal' bartenders, they
think that their flairing somehow makes them better than us.
Juggling a bottle does nothing for a drinks taste.
The only thing about TGI bartenders that I admire is that they get trained to
converse with their customers... note: actual service!
Actual ability to make good drinks, sell spirits, etc is sidelined to make way
for non-essential bar movements.
All good bartenders use both hands, move properly behind a bar etc etc, and
yet flair bartenders go on about how fast they are in comparison with other
bartenders.
They (the flair guys) go on about their 'superiority' (oh! yes they do!), and
yet 'we' are not allowed to say 'hey, what you guys are doing is no big deal!'
picking sometime on a regular basis does'nt mean I have to juggle it, flip it
etc.
The stages in development to procede from barback to bartender, then to
experienced bartender does not have room for flairing.
Product knowledge? (anyone?)
Having worked with numerous Flair bartenders (one of whom claimed to have been
European champion!), I have continually out-sold them, made better cocktails,
completed a better bar set-up, kept level headed etc etc (you know, the
important stuff!)
