are there any real bartending competitions, which do not rely on flairing as 
their sole criteria?

Of all the bartenders I have ever worked with, the flair bartenders made the 
worst cocktails!

Everyone had exactly the same specifications for each cocktail, all formated 
nicely, lists of ingredients etc. Yet some how (non-flairing) bartenders, of 
less than one years experience, were making better cocktails than they were.

It is a shame that the hours of practice at home, did not make them better 
mixers.
