I do appreciate how incredibly funky it would be to be you, watching this 
effort being made specially on your behalf.
That's the plus.

I'm thinking of the guy behind the guy behind you, waiting at the bar with an 
empty glass who's not going to get his drink for another 12 minutes.
Certainly there's a trade-off. As with any flair (and I think this sort of 
presentation overlaps with "flair") the person you are making the drink for 
gets an exponentially larger kick out of the extra time/effort that may go 
into the prep than the guy behind or the girl behind that.

Yes, I have more familiarity with volume bars than silver-service places. 
Yes I know there's a 2:1 customer:staff ratio in a lot of those japanese bars.

Yes, I'd certainly love it if I could be served like that by a bartender in a 
nice place nearby. ... for the first two times. By my third drink I'd be just 
"use the old ice" like some of the fusty whisky drinkers I've met before...
