I have spent some time over there.. have lots of video but most of it huge
files and with my minuscule brain and slow pc can't seem to edit properly...

Japan is one of the only places I have been to in my travels where almost
everything I saw was new and amazing in a bartending world...
Notable things were
1. The incredible bartender to guest ratio... 1:5 in many bars
2. The incredible 'ballet' of drinks making... imagine bartending as martial
art and you have it.
3. Odd hygiene stuff... no pipette method of tasting cocktails... they get a
barspoon and place drops in the back of the hand before licking; plus they
handle ice balls quite heavily (as my 900mb file shows... starts off the size
of a loaf of bread and ends up perfectly round and perfectly smooth) yet use
tongs to place cubes in a mixing glass to maximum effect.
4. Most bars will 'rinse' the ice cubes with mineral water before using.
5. Outrageous displays of the most obscure spirits you have ever seen...
handfpainted tanqueray bottles, 25 year old Wild Turkey etc etc.
The whole place will blow your mind... if you have a japanese speaking guide
as so few japanese speak english...
