That's even harder to answer.
I have three people sitting in front of me. One wants a Vodka Collins with
Gin.. the other wants a Strawberry Daiquiri, and the third wants a Dry Apple
Martini with extra olives..
While I make the Strawberry Daiquiri, I try to come up with a polite,
non-condescending way to ask the Vodka Collins with Gin lady what she REALLY
wants (it turns out, she want a TOM Collins, not a Vodka Collins with a shot
of Gin added), or to tell the Dry Apple Martini lady that an Apple Martini
CAN'T be made dry, as the apple is SWEET, I have two more guest that KNOW what
they want that place an order.
Nope.. I don't try to carry EVER more than three filled glasses at a time. I
have NO qualms about making one, or two drinks, delivering them, then making
the third. The way I make it look 'smooth' is that I ask the others more
detailed questions while I'm working.
The reason I don't like to carry a lot of glasses is that I really don't like
to sit around all day with a wet shirt! Carrying stemware means carrying it by
the stem. Should I carry wine glasses by the balloon, I run the risk of
'warming' my drinks. Beer, in frozen glasses, are slippery enough.
We seldom have trays behind the bar to use to put drinks onto, and the volume
we have to serve doesn't translate into rushing any more than I do.
