One thing I've found helpful is a very good zester. I use a Microplane
zester/grater (http://www.microplane.com/40020.shtml) which is just short of
magic. It's mindbogglingly sharp and cuts exactly the right depth. (It's
reasonably safe because the little blades barely stick out at all. You could
accidently shave a little skin off but not enough to do any real damage.)

And yes, only gently washed, unwaxed, organic lemons from a source you trust.

I've never added other flavors. It somehow seems sacriligious. But hell, clove
sounds great! Other things that come to mind: ginger, lime zest, lemongrass,
hand of buddha citron, or maybe some spicy grape stems.
