May I suggest:
 First to preface, let's face it, most guests simply don't know much about 
cocktails and it's safe to say that I don't know much about their business 
either. Anyway, what I also find is that guests are fascinated with the 
history of cocktails, so what I see working is that under each of your classic 
cocktails (on your menu) writing a catchy blurb of history about it. I think 
it would give then an appreciation that they disn't know was deserved.

There's much written about the Daiquiri and I think your guests will find it 
interesting to know that when you say Daiquiri it doesn't automatically mean 
Strawberry Daiquiri (of which I deal with almost every shift I work here in 
the Sunshine state).
