all of this, and more...
you'll AT LEAST need to know some pouring/counts, know how to change kegs,
and work a register while people are barking at you for drinks...
if you were a salesman, you'll probably be able to BS your way through it, but
i hope you're a great BS artist and convincing talker...there's a lot to
know...i've been at it for 7 months and still feel like a total rookie...plus
i had bar-backing and waitering experience at BUSY places...you gotta know the
techniques: build, shake, strain, etc...pouring draft beers looks easy but it
can be a bitch with foamy/heady beers, especially if the glasses are really
cold, it gets a little frustrating, learn the kiss and slant...
good luck and keep a good recipe book hidden, you'll need it...i recommend the
Bartender's Black Book by Cunningham, latest edition...
