Just been through this post, very interesting stuff. Charles, I’ve never had a 
working experience of "Club Service" but I have had the pleasure of being on 
the receiving end at some of London's classic hotels such as Dukes or The 
Savoy. It's certainly a skill and something that I think has a role to play in 
the modern bartending world. You really haven't lived until you have been 
served a Tanqueray Martini from a Martini trolley at Dukes Hotel in London, 
bartenders wear white gloves so their skin will not come in contact with the 
lemon zest, everything, and I mean everything, is served using tongs and it 
really is a great experience. The chaps at The Savoy are the masters, Peter 
Dorelli was head bartender there for 40 odd years and he learnt his craft from 
the guys trained personally by Harry Craddock himself so the standards are 
exemplary. I would suggest getting in touch with the UKBG here in London 
(www.ukbg.co.uk) and asking their opinion. The UKBG is very "classically" 
based and therefore they are the guys to ask, Salvatore Callabresse is the 
President at the moment and he loves this sort of thing.
