The important thing in club style service as you call it is to have the proper 
glassware so as to preserve the ambience and the bottom line. The rocks glass 
should be on a napkin and the pony carafe should not be. Sometimes you will 
need 3 glasses, one for water back, one empty (or with rocks) for the customer 
to pour into and the pony carafe. Again the pony carafe goes without a napkin, 
but both of the others should be served with napkins underneath. The carafe 
goes to the customer's right, the drinking glass center, and the chaser 
slightly to the left and behind the drinking glass. The pony carafe is filled 
in front of the customer on the bar and is the last item presented.
