Why would it increase in alcohol content? You take a bottle of vodka, 40%ABV
and pour it over some fruit, leave it for a couple of weeks, strain it, you've
still got 40%ABV vodka, but now flavoured by the fruit. If anything it would
be minimally less alcoholic as you've introduced another ingredient.
Also, I've kept a cranberry and a blackberry and raspberry infused gin for
several monthes with the fruit still in the bottle with no problems of it
breaking down or becoming overpowering as suggested earlier.
