Infusing is combining alcohol (or anything else) with other flavours. For
example in my bar we infuse rum with cinnamon (leave a couple of sticks in the
bottle for a couple of days and the rum takes on the cinnamon flavour), spiced
rum with orange peel (as above), tequila with vanilla (as above) and gin with
blueberries (as above). It's simply a way of combining the flavour of a
certain fruit or spice with the alcohol of your choice!
