Two quick comments...

one, everclear is a product really intended for home use anyway.  In the bar, 
it just has almost no place...not unless that bar has some special thing they 
like to do with it.

two, everclear is no different from vodka (in terms of strength) if you cut 
measurements it in half or a third (depending on everclear strength).  You 
could make a screwdriver without a second thought that was made with 1/2oz - 
1oz of everclear and it'll be the same as one made with 1oz - 2oz (of course, 
lacking the vodka flavor).  Not recommended, but it's easily done.  Thus, 
there's no justification to fear serving it, only justification for having the 
simple taste and class NOT to serve it :)
