Wow, sounds pretty cool tipwise, but two hours is definitely too much work 
afterwards. I don't think this business has any "norms", there are so many 
different kinds of bars out there. Our bar is so dinky. But I've noticed 
recently that there's always someone around who's willing to do shitwork in 
return for free drinks. The other day the sink in the men's room broke 
(someone fell on it), and we just paid the fix-it guy in draft beer. Maybe 
that's one of the benefits of being located near a homeless shelter.
We don't have any barbacks, which is fine for now, but I'm a little worried 
about Mardi Gras. How will I have time to restock ice?!

Ten years ago, I worked as a dancer for a brief time, and I was 
shocked-shocked! to discover that we girls had the responsibility of cleaning 
the bar afterwards. But we didn't have to do anything too hard, and with ten 
or so girls, it only took about half an hour. The copper-topped bar was a 
bitch, though.

What are "buybacks", by the way? Is that when a customer buys you a drink for 
later?
