what are the Co2 tanks for (post mix? Beer?)

The first thing I recommend doing is checking out that the previous bartender 
has set up properly. Then at the same time, tidy up!!!

Then I suppose you should check the CO2, though it seems a little strange. 
When its empty, change it. Are you supposed to change it, just before its 
empty, or set up the spare tanks next to the nearly-empty ones?

If you re-stock at the end of your shifts, and others do the same, then you 
will not have to re-stock at the beginning. what goes around comes around. 
They stock up, you stock up...at the end of every shift...and don't leave the 
bar 'til its done!

There is also another possibility, your boss is an ass!
