No, I've never worked in a bar that had Herbsainte.  Seeing as you rinse the 
glass with the stuff I'd think it would be near impossible to tell the 
difference once you've added the rye and bitters (I'm back to talking about 
the standard Sazerac).  

I'll try making this Speyside Saz at home one of these days - after I buy some 
rye.
