Hey Kelson,
I vaguely remember a story a friend once told me about a bartender on cruise 
liners back in the 80s. A complete teetotaller, he had never touched alcohol 
in his life through choice. I can't remember the explanation given, but it 
turns out he just had this innate ability to understand taste combinations 
when it came to alcohol without actually having to taste the alcohol himself. 
A big part of this was getting guests and friends to taste alcohol and 
describe what they tasted to him, as well as getting them to taste his 
cocktail concoctions and tell him what they tasted like. In the end, this 
bartender ended up creating the Blue Lagoon (correct me if my history is 
mistaken, it WAS a word of mouth story after all :P ) and a variety of other 
tropical cocktails, so let it never be said that just because you don't drink 
alcohol yourself, you don't know what you're doing behind a bar. Good luck
