Dan, we have a very good "Bartender Handbook" and a list of opening duties and
closing duties that are issued daily to be initialled (sp?), at the risk of
sounding quite corporate.
Really, we just have standards and if they are't written down to hold another
accountable, well with a staff of 48 tenders, crap doesn't get done. I'd be
happy to email, or post if that is something you are interested in reading...
