Mmm. Yep I did get you started ;-)

I certainly acknowleged that there is a time and a place for different levels
of obsequiousness. (Goddamn, I spelt that right first time!)

My high-turnover nightclub attitude does not apply to your classy resort.
Totally agree.
Plenty of times I wish I could give better, dedicated service, prompter... but
the rate things are going I'll have to piss of a hell of a lot more people
before I can thin the crowd out to that stage!

Although you are not happy with snappy retorts, you are saying how you, and
the management, have not yet come up with a good balance between telling them
to wait their bloody turn, vs wasting time explaining that you will be with
them shortly, all the while dragging out time for the other valued patrons.

Which is, I guess, where the glassy-eyed short-focus vision tactic is the only
out. I'd much rather be called up and have to say "Sorry, I didn't see them
there" than explain any of the other multiplied priority-juggling that was
going through my head at the instant I made eye contact ... then looked away!

Even a simple finger in the air (no, not that one) to indicate "I'll be with
you next" can be enough to get somebodys temper tantrum up ... as it seems you
have found! In the face of that sort of BS, is it any wonder that I'll happily
say fuck 'em all, and keep doing what works! Greatest good for the greatest
number. Omlette, eggs etc.

What's your preferred middle ground? Is there one that doesn't, in some way
slow things down or contribute to stomach ulcers? What did mgt. say at this
shakedown meeting? Anything actually constructive, or just a bunch of "don'ts"
?
It sounds like you respect them in general, and appreciate their concerns, but
are they providing leadership here?

.dan.

How do I pour? What is 'cl', 'oz' and 'pt'? How should I handle glassware?.
