Personally, I hate seeing bartenders catching a bottle on the back of their 
hands.  I have worked in a bar where i was expected to flare with an empty 
vodka bottle whenever i wasn't serving, so although i can flare reaonably 
well, i choose not to.  Working flare looks great but above impressing the 
customers i find certain things speed up my service.  Throwing bottles from 
hand to hand or spinning to change grip on the bottle etc.

If you must spin your bottles, only do it when they are less than 1/4 full, 
that way most of the liquor stays in the bottle.
