You said this was a new restaurant, right? If so, it won't be like this
forever, probably not for much longer than three months, so just do the best
you can, and probably get ready for the nights where you hardly need two
bartenders. I used to open restaurants, training bartenders, and it was ALWAYS
like this for the first month to three months. Also, the money WILL get
better, even as it slows down, for a few reasons. The servers will start
tipping out better (eventually) for various reasons I won't go into, you'll
develop regulars, which I'm sure you don't have many right now, and there's
always a certain percentage of "newbie" type customers who also flood into new
restaurants, and they generally tip like crap - the same people who bring down
the tip average on Mothers Day, Valentines day etc.
If you can tough it out, gain some quick senority - you'll be making better
money, with less bartenders and probably a few less guests than you do right
now.
