I applied at a fine dining bartending gig once and they had one of those 
psychological profile tests some of the big corps use, pretty funny actually, 
the same question phrased differently about over and over - if I remember 
right, it was about 100 questions long. They then had a verbal general 
bartending knowledge test, which was pretty straight forward. I remember one 
question, which I didn't know (What's a Varietal - hey, I was still green) and 
another questions was what the well setup at my current bartending job was, 
which was funny because we literally had a double rack well, each with about 
20 bottles.
