The effect of your brain hemmorage is the curdling (...works best...) of the 
cream liqueur, not the strange shapes formed by the few drops of grenadine 
syrup?

Citrus flavour does not have to mean acid. Flavour from triple sec is mostly 
from orange skins. Other fruit liqueurs often have a little fruitjuice (which 
is acid) added.
