Good shoes help and you might want to try some of those gel inserts (different 
people swear by different brands). Most long term waiters and chefs I know 
invest in the most comfortable shoes they can. They say that that's the only 
way they can hold out shift and shift.

At least he was drunk when he did it. I have seen some bosses do this when 
they weren't drunk, just 'being themselves'.

The best boss I worked for back in my grad school days was also in my Tae Kwon 
Do class. He hired me to double as a bouncer (I was in a lot better shape back 
then, having just gotten out of the Marines). It was pretty rare to have 
serious problems with customers, but we always had a waitress's boyfriend or 
mad 'other woman' showing up. Sometimes others on the staff can be more of a 
problem than your clientle.
