Well, my way is when I get the order, if it includes any beer I knock that out
first, than I mentaly note when the drink is mentioned, I think of the base
spirit first in that i will use it for double pours, I lay the drinks up and
do them all at one time instead of finishing a drink at a time, Another trick
is that when called I make a image of the glass the drinks go in for than I
lay that glass out so if I get sidetracked, seeing the glass will remind me
whether its a rocks, martini ect...If I have to Shake a drink I instantly
scoop the tin in the ice bay so its ready for the liquer, blended drinks get a
cheater tin instantly and load the blender as they are calling out the other
drinks. There is times when you just cannot get ahead, so if you smile laugh
crack a joke at your mistake, people feel comfortable even though they are
standing, I used to work a club in Rio that was actually a seasonal spot
during Carnival..it actually was a wharehouse, the thought of a "well" or
"rail" was rediculous, we would have every bottle of liquer with a pourer on
it on a table behind us, in rows of 10 bottles deep! It would be gone real
quickly, It used to hold like 1500 people but in Brasil who counts?...LOL
there are bars that open up at 6:am and people continue the party till noon
the next day! During Carnival there is just too much of everything to deal
with on a "this is how its done" basis, it like laying in a field of Army
ants, it just swarms over you until they are through with you.lol There was no
way I was prepared for that but I had good bartender friends that were patient
and helped me thru it. One thing though big clubs do have a flow pattern in
regards to multiple stations, I have recorded this at my club now, certain
stations always do better than others in regards to its money, also you need a
good team effort, I tell my bartenders to bail each other out when they need
help, it should never be about you against the other bartenders, everyone
sinks or swims as a team.
