As for memorizing drinks, I did, and still do, research, study and use my own
personal memorization tools. Repetition is what helps me most, so for me, I
learn best from hands on experience.
I did, and still do sometimes, get nervous behind the bar. It's wierd how I
even got into this business, put me in front of 20 people for some kind of
speach or disscussion and I used to choke, but serve and speak to 100
customers I never saw before, no problem. Anyway, for instance, this Fri. we
are implementing a new Martini list of about 20-25, non-traditional, what I
call trendy, sweet/desert-like Martinis. I feel pretty nervous about being
slammed and not having made them all before more than once. But, nerves, as I
see it, especially in this situation will propell me to study and memorize
which helps me do better. So nerves are good sometimes.
Without going into a along disertation about drink preperation; Remember
this-EFFICIENCY- Less steps you have to take, the better.
As for "jigger/no jigger", it has been my experience that every place is
different. Some require you to use one and some promote free pouring. As for
electronicly measured pour's, I've never used one.
