If they are there all day then you need to make sure all your nip pourers have 
caps and cannot be left free to air. 
Any fruit garnishes need to be kept in air tight sealed containers. 
Dirty glassware and waste sinks need to be kept clean and emptied asap.
If they are only there after the night you have a cleaning issue. If the bar 
is cleaned properly there is nothing there to attract them. You can also buy 
food safe sanitisation spray but i have no idea on the brand we use as i am at 
home.
Basically its all about keeping things clean and tidy and maintaining it. I 
also work in a tropical environment and sometimes have the same issues. 
Usually it leads to a staff member not cleaning properly, leaving a bottle of 
juice out accidently, or glassware left somewhere.
Actually, you can probably also ask your boss for a insect attraction light. 
There are different types that do different jobs though so purchase 
accordingly.
