Here's a small thing that helps me: go for the glassware first.  Granted, you 
have to do the glassware before everything else, sorry if that's a tad 
obvious, but I mean just get the glasses on your mat (icing, of course) as the 
person is still ordering before you step away to do anything else (e.g. pour 
beer, ring up the till, grab a bottle from the back bar).  

If it's all rocks glasses that doesn't help much, but if I'm doing an 
Appletini, two JD & Cokes, a Tequila Sunrise, and two beers, it helps me to 
set up all of the glassware first thing, grab the beers, if I get lost seeing 
the glasses normally jogs my memory. 

And pray that no one as warped and cruel as Bippo steps into your bar.  ;)
