Look eager, but not desperate. If you're desperate, they'd start to wonder why 
you can't get a job anywhere else. ;)

Personally, if I was deadset keen on working in a place, I'd follow the advice 
a lot of people give around here and that is to go into the bar, get to know 
the tenders and the managers, become a regular, and either subtlely let them 
know or casually remind them every now and then that you're a tender and are 
interested in working there. It takes time, but will pay off in the end. If 
nothing else, you can share both your and their knowledge without having to 
actually work there.

I haven't had to resort to that method yet, but you never know. ;)
