egg whites help the drink to froth and stabliize the "head",
eggs yolks add color and creamyness.

There is almost no flavor in an egg white but a lot in a yolk(just my opinion)
In baking a whole egg or an egg white makes a big difference but as far as my 
tastes buds go I can't tell much of a difference in a drink.

I use an egg white in the blender when I make sour mix as it helps to stablize 
the mix.
