Subject: In a drink, what is the difference between a whole egg an Egg yolk or an Egg white ?

The first two drinks below are Flips one uses a whole egg and the other uses 
an egg yolk.  The Almeria uses an egg white.
What is the difference in a drink between a whole egg, an egg white, or an egg 
yolk?
Could they all have contained just an egg yolk or an egg white or a whole egg?

Brandy Flip 
 
Ingredients:
	2 oz Brandy 
	1 whole Egg 
	1 tsp superfine Sugar 
	1/2 oz Light cream 
	1/8 tsp grated Nutmeg 

Mixing instructions:
In a shaker half-filled with ice cubes, combine the brandy, egg, sugar, and 
cream. Shake well. Strain into a sour glass and garnish with the nutmeg.

Cognac Flip 
 
Ingredients:
	1 Egg yolk 
	1/2 oz Sugar syrup 
	3/4 oz Cream 
	1 3/4 oz Cognac 
	Ice 

Mixing instructions:
Shake well all ingredients in a shaker. Strain into cocktail glass and grate 
some nutmeg on top.

Almeria 
 
Ingredients:
	2 oz Dark rum 
	1 oz Kahlua 
	1 Egg white 

Mixing instructions:
In a shaker half-filled with ice cubes, combine all of the ingredients. Shake 
well. Strain into a cocktail glass.
